Asian persuasion

Saturday night my boyfriend came home, woke me up from napping, and made me the best dinner. He's great. Dinner was delicious and it was the perfect meal for a rainy, cold night.


Dan Dan Noodles

Ingredients:
  • 1 lb local organic beef
  • 2 tsp Chinese pepper
  • 1 big handful of organic bok choy
  • 1 big handful of organic spinach
  • 1 big handful of both organic cabbage and organic broccolini or broccoli
  • 4 cloves garlic, finely chopped
  • Spring onion, finely chopped
  • 5 tbsp chili oil (I'm a weakling with spice so Matt used 4)
  • 3 tbsp low-sodium soy sauce
  • 1 bouillon cube
  • 2 tbsp local organic honey
  • 10 oz Udon noodle
Fry beef in a non-stick pan without oil for 10-15 minutes until crispy. Pour out excess fat and stir in 2 tbsp of the honey. Stir for a minute, then take off heat.

Boil water in a large sized pot and add the bouillon cube. Cook noodles, and a minutes before you drain them, add all your veggies, then drain.
*Save one cup of the broth for later

Add the noodles, veggies, and all other ingredients except the beef back into the warm pot. Mix in the reserved cup of broth.

Serve noodles in a bowl topping with beef, spring onions, and more soy sauce.
